Chocolate BEER Truffles, Oh Yeah!

trufflesThis weekend group of friends, L and I are planning on heading out to what I am told is the best dog park around. (I have never been so I will give a review later.) If you are in the Seattle area and have a furry friend I really recommend checking out my classmate and friend Jenny’s blog for great information on all the dog friendly places in Seattle.

Anyway, since the group of us going to the dog park are all gamers of some variety, we joked about our geek dogs. Well, and of course talked about bringing beer. That is when I got the idea to make the beer truffles for the first time in a couple years. I got the recipe from a friend who I think found it one night when drunk and looking for chocolate recipes online.

Okay, the truffles are for the humans not the dogs, but I decided to make beer truffles which is something I haven’t done in a long time.

BEEEEEEEER Truffles

  • 1/2 cup beer (stout or porters work best, I am using a Stone Brewery Porter)
  • 1/4 cup heavy whipping cream
  • 1/2lb chocolate  ( this works best with a dark chocolate, a baking choclate I prefer Vahlrona)
  • cocoa powder
  1. Chop the chocolate. (DEAR GOD, don’t use chocolate chips…seriously get good dark chocolate.)
  2. Place chopped chocolate in a medium sized heat-proof bowl. Put it aside for now.
  3. Bring beer to a simmer over medium-high heat and reduce it by about half.
  4. Add heavy cream, bring to a boil.
  5. Pour beer cream mixture over that delicious chocolate. Let it sit 1-3 minutes.
  6. Stir until all chocolate is melted and mixture is all smooooooooth.
  7. Cover, refrigerate 4 hours.
  8. Scoop 1-inch balls of ganache, roll between palms until smooth, and coat in cocoa powder. Store in the refrigerator.

Now you can have a little fun with this, like by putting a little sea salt on them if you like, or add nuts, etc. I prefer them simple like this. Sometimes I DO roll sprinkle a little sugar on them.

ALSO- if you want them a little lighter and sweeter, use a lighter chocolate, or add a little marshmellow fluff to the chocolate before adding the beer cream.

Difficulty: Easy

Destructo Rating: Medium. Not advisable for when playing card games, since you get powder on your fingers, but generally a great end of the game night treat.
